The soils are super sandy and the roots tap the water table in most parts so a full canopy gives the fruit plenty of cover and therefore even bunch ripening.
The fruit is handpicked and fermented very lightly in the winery before being matured in separate batches in new and used barrels.
Each barrel is then tasted and the ones deemed the best are blended and bottled.
