Penny's Hill 'The Agreement ' Sauvignon Blanc 2021

Agreed by the Anthony's (Toop and Parkinson) 'The Agreement' owes its origins to the Toop family's impressive cool-climate Battunga vineyard.
In line with the Penny's Hill mantra of white wines from outstanding Adelaide Hills 'Estates of Mates' this single vineyard Sauvignon Blanc shows purity, elegance, fine balance and bright natural acidity.
All in perfect agreement!

Vineyard
This single vineyard fruit parcel is from the 3 hectares of Sauvignon Blanc plantings in the Battunga Vineyard, located in Kuitpo in the southern Adelaide Hills.
Cane pruned, these vines were planted on their own roots in 1997 using the F4V6 clone.
Fruit was harvested during the early hours of the morning on the 6th of March at 11.8 Baume.

Winemaking
Grapes were destemmed, crushed and chilled prior to gentle pressing with only the free run component being used for this wine.
Fermentation occurred in temperature controlled stainless steel tanks using a sequential yeast inoculation with two yeast strains to increase complexity, mouthfeel and texture.
Juice was fermented at cool temperatures (12-13°C) to encourage retention of Sauvignon Blanc varietal characters and the wine was lightly fined and filtered prior to bottling.

The Wine
An floral bouquet, showcasing lime zest, kiwi fruit and melon fruits, this flavoursome wine has exceptional fruit intensity and is well balanced with purity, elegance and crisp minerality.
