WINEMAKER NOTES This wine is produced from only the top 25 % of Cabernet Sauvignon fruit available from the Serafino McLaren Vale vineyards. Once destemmed the grapes are fermented in small 4 tonne open fermenters. The temperature and extraction are monitored over a 7 day fermentation period. Tannin and colour extraction is achieved through regular pump overs of the fermentation cap. The wine is then pressed and allowed to finish the malolactic fermentation prior to spending up to 1 year in new and 1 year old French and American oak hogs heads.
