Our Big Little Secret Adelaide Hills Blanc de Noir 2017

Made from 100% Pinot Meunier, from Udy’s Lane in the Piccadilly Valley. If this was a horse, the blood line is impeccable.  You simply can’t get better fruit from a better region to make fizz.

Pinot meunier has a slightly higher natural acidity than pinot noir and gives a brightness, fruitiness, and spiciness. We picked this fruit early to maintain as much natural acid as possible, whilst still offering a bouquet that is bright and fruit driven. It has a delicate palate and perfect for this seasons festivities.

The fruit was crushed, chilled, gently pressed, then transferred to temperature controlled stainless steel vats where the wine underwent a controlled fermentation. On May 21 it was transferred to Vinpac for the Charmont method of secondary tank fermentation. This process takes ~ 3 weeks and is what gives the wine its fizz. Bottled in late June 2017.

The wine is slightly pink, from the breakdown of the red skins whilst on the vine. It has a very fine bead that liberates the bouquet trapped in the wine. The wine opens to display a delicate palate and a crisp clean finish.

A young, refreshing wine with lively acidity.
